There is a lot of talk about zero-waste cooking, and very often, with small gestures, we can also be sustainable in our home preparations. This is the case with candied orange peel. Oranges - typical winter fruits - are citrus fruits with a delicious juice. But their zest is no less. You can grate it on sweet and savoury dishes, perhaps fish-based ones, or you can prepare delicious candied orange peel. Here's how to do it.

Step 01

Obtain the peel of the oranges by removing the white part as well.

Cut the rinds into strips.

Bring half a litre of water to a boil in a pot and dip into the orange peel. Blanch the orange peel for 10 minutes and then drain.

Rinse them well and dry them on a clean, dry cloth.

Put 3 cups of sugar and 4 cups of water in a saucepan. Turn on the heat and melt the ingredients, stirring until a sort of syrup forms. Add the orange peels and let them cook over low heat for about 40 minutes, until soft.

Step 06

Put the remaining cup of sugar on a lined baking tray. Drain the orange peels from the syrup and pass them quickly onto the sugar, then transfer to aluminium foil or parchment paper.
Let the candied orange peels rest until they are completely dry.

 

Advice

You can keep the orange peels for a few weeks in airtight glass jars. Use them as candied fruit for your desserts or to decorate cakes and muffins.
