Cane sugar
300 g
Golden syrup
150 ml
Bicarbonate of soda
Half a teaspoon
Butter

Honeycomb toffee is an English dessert that is both hard and crumbly at the same time. Being very sweet, honeycomb is also perfect for crumbling over puddings, mousse and panna cotta.

Honeycomb is traditionally prepared with golden syrup, a vegan syrup which is very similar to honey and made with sugar, water and lemon juice. You can find it in well-stocked shops, or replace it with honey or maple syrup. Here is the recipe.

Heat the sugar and golden syrup in a saucepan and mix. Once the ingredients are dissolved, a sort of syrup will form. Cook for 6 minutes over high heat, stirring.

Meanwhile, grease a pan well.

Turn off the heat and add the baking soda, stirring well with a wooden spoon.

Pour the mixture into the pan and let it cool.

Once cold, break up the honeycomb and serve.

Advice

Cooked caramel is very hot and may form bubbles on its surface with the addition of baking soda. Try to resist touching it to prevent the bubbles from bursting.
