Onion
1 kg of golden onions
Caster sugar
150 g
Water
250 ml
Extra virgin olive oil
2 tablespoons
Butter
A knob
Salt and pepper

Great for filling burgers, sandwiches and meat dishes, caramelised onions are simple and delicious. Ideal for flavouring dishes, caramelised onions are extremely cheap, easy and tasty. Here's how to prepare them.

 

Step 01

Peel the onions and slice them in half vertically. Thinly slice each half with a sharp knife.

Step 02

Put the extra virgin olive oil and butter in a large pan. Heat over medium-high heat, until the butter has completely melted.

Step 03

Add the sliced onions, salt and pepper. Stir and cook until the onions have softened. It will take about 5-10 minutes.

It's time to add the sugar and water to caramelise the onions. Continue cooking for about 1 hour over moderate heat, continuing to turn so that they don't stick to the bottom.

Step 05

The caramelised onions will be ready when they are soft and a nice golden colour. The liquid should have almost all evaporated.

Tip

For a stronger flavour you can add a teaspoon of Modena balsamic vinegar to the onions.
