Troisgros puts his spin on buffalo wings with these breaded wings bathed in a guava-based sauce, with a generous touch of Thai sriracha pepper and topped off with a toasted sesame mix.

Step 01

Defrost the wings, if necessary.

Step 02

After thawing, season the wings with pepper, salt and bread crumbs, until the entire surface is covered.

Step 03

Check the oil temperature (between 160 and 180 degrees) and fry for five minutes. Set aside at room temperature.
 

Step 04

After cooling, portion the chicken into five units, label and place in the freezer.
 

Step 05

Assembly:

Take the pre-fried and frozen wings and re-fry for another five minutes.

After frying, place in a bowl and cover evenly with Sriracha Goiabada Ketchup.

All wings must be slathered in sauce.

Place in a container, sprinkle with toasted sesame and serve.
