SingleThread will be bringing a taste of Japan's Hokkaido to the heart of Sonoma Wine Country this winter, with an outdoor tented pop-up experience from 10 December, to 28 March.
The pop-up will be located in an outdoor 'forest', designed by San Francisco designer Ken Fulk, adjacent to the restaurant. Owners Kyle and Katina Connaughton will be sharing their unique winter wonderland with their guests, reflecting the magical experience of their formative years as chefs, spent honing their cooking and farming skills in Hokkaido, Japan.
Guests will be treated to a total experience with dining taking place completely outdoors in a specially designed and heated open tent with 'gyotaku' artwork and socially distanced tables. Each dining party will share donabe hot pots.

Guests will be able to choose from four donabe pots: Hokkaido Seafood and Miso Nabe; Roasted Duclair Duck Nabe, Vegetable, and Mushroom Nabe; Vegetarian Tofu, Farm Vegetable, and Yuba Nabe; or Premium Hokkaido A-5 Wagyu Beef Tenderloin Shabu Shabu. Everything will be cooked in special handmade donabes from the Nagatani Family in Iga, Japan.
The Hokkaido-inspired menu will also feature carefully sourced ingredients like uni, scallops, crab and salmon roe direct from the northern island of Japan, alongside the restaurant's home grown and locally-grown produce.
