ingredients

Gluten free flour
260 g | 2 cups (plain flour mix, plus extra for dusting)
Cornflour
70 g | 1/2
Cinnamon
1 tsp
Nutmeg
1/2 tsp ground nutmeg
Cloves
1 pinch
Xanthan gum
1/2 tsp
Salt
1/2 tsp
Dairy free margarine
125 g | 1/2 (softened)
Caster sugar
125 g | 1/2 cup caster sugar
Egg yolks
1 (large)
Almond milk
2 tbsp
Orange juice
1/2 orange
Lemon zest
1/2 orange

Step 01

Stir together the flour mix, cornflour, spices, xanthan gum, and salt in a large mixing bowl.
 

Step 02

In another mixing bowl, cream together the margarine and sugar until pale and creamy, about 2 minutes.

Step 03

Add the egg yolk and almond milk, beat well, and then fold in the flour mixture, orange juice and zest, and mix to a soft dough. Shape the dough into a round, wrap in clingfilm, and chill for 1 hour.

Step 04

After chilling, preheat the oven to 170°C (150° fan) | 325F | gas 3. Grease and line two large baking trays with greaseproof paper.

Step 05

Roll out the dough on a lightly floured surface to 0.75 cm | 0.333" thickness. Use a star-shaped 5 cm | 2" cookie cutter to cut out stars from the dough.

Step 06

Arrange the stars on the trays, spaced apart. Bake for 20-25 minutes until dry to the touch and golden on top. Remove to wire racks to cool.

 

Step 07

Tie stacks of shortbread with decorative red and white ribbon before serving or presenting as gifts.
