Coming Soon: Bocuse d’Or Latin America 2016
Sirha 2016, Mexico City is gearing up to host the Latin America selection for Bocuse d'or Latin America chefs to compete in France in 2017. See the line-up.
Bocuse d’Or Latin America will welcome ten talented Latin American Chefs to compete at Sirha Mexico 2016, Mexico City, on the 11th and 12th February 2016.
The S.Pellegrino sponsored 'Continental Selection' will serve as a great opportunity to promote Mexico City and gastronomy presided over by Enrique Olvera, the emblematic leader of the new wave Mexican cuisine, as well as showcasing the quality richness, creativity and dynamism of Latin American cuisine for which it has become so famous in recent years.
The ten chefs will compete in a live competition in front of an audience following which the jury presided by the famous Peruvian Chef and writer Gaston Acurio, fresh from the news he will be stepping back into the kitchen at Astrid y Gastón, Lima, will taste and mark the dishes.
Only the top three chefs will be entitled to participate in the Grand Final of the Bocuse d'Or in January 2017, where they will be up against the best chefs from the other continental selection events in Lyon, France.

The Candidates
The ten selected Latin America candidates and their restaurants include; Jessica Toni representing Uruguay (Restaurant El Tajamar), Erick Dreyer representing Ecuador (Restaurant Cire), Victor Daniel Becerra Venegas representing Mexico (Bec Bistro), Daniel Alberto Avellaneda representing Colombia (Asocolchefs), Giovanna Grossi representing Brazil (Parmegiana (Maceió)), Palmiro OCampo Grey representing Peru (1087 Bistro), Gaston Vicenti representing Argentina (Colegio Gato Dumas), Homero Antonio Burgos Olmos representing Chile (Hotel Santiago Park Plaza), Marcos Jose Saenz Gonzalez representing Guatemala (Efectorio Hotel Museo Casa Santo Domingo) and Marcos Sanchez Vargas representing Costa Rica (Food Garage Costa Rica).
Accompanied by their commis, the chefs will demonstrate the know-how and the gastronomic culture of their respective countries, by preparing two dishes (meat and fish) prepared live in exactly 5hrs and 35mins,
The jury will score the dishes based on a number of criteria including taste as well as design, creativity and plating.
