Here’s a wonderful presentation from the Mexican chef Jair Tellez speaking at Food on The Edge - the Irish food symposium held in Galway.
Tellez runs two restaurants Laja and in MeroToro and in the presentation he presents Laja - an exciting project that has worked not only as a restaurant but a social enterprise.
Tellez doesn’t speak much during his presentation but instead plays a wonderful video that introduces the restaurant and explains the story behind some of the staff members.
It was one of the most emotional presentation during the symposium and within a few minutes of watching you’ll see why.
