Here's another great how-to video from Bon Appétit magazine, but this time we're not looking at how to break down a whole cow or tuna; we're discovering how to make delicous soba noodles by hand.
Soba are thin noodles made from buckwheat ('soba' is Japanese for buckwheat), or buckwheat and wheat, and as ever with these videos, even if you're not planning to undertake what's being demonstrated, it's great to get a better idea of the craft involved and some of the terminology, the necessary tools, etc.
