They may look like your regular, normal noodles but these are actually made from green bean starch and hot water.
Called ShanXin LiangFen, the dish, which translates to Sad Jelly Noodles, is served all over China, including Sichuan, a place known for their fiery take on Chinese cuisine.
The ShanXin LiangFen noodles in Sichuan are no exception, usually served cold, with spicy sauce and topped with coriander, garlic, nuts, chili, pickles and more spice.
The video below, by Business Insider, shows the noodles being prepared, a little weird to see a huge jelly block, but we promise, they’re delicious.
