Le Jardinier proposes a menu that is not vegetarian but vegetable-forward, featuring modern dishes prepared using classic French techniques and focusing on seasonal vegetables, herbs, and fruits to accompany sustainably sourced seafood, meat, and poultry.
Like the menu, the interior of Le Jardinier, designed by award-wining French architect Joseph Diran, represents a refreshing departure from its Midtown Manhattan context. The aim is to help people feel closer to nature and its rhythms, first through the design and then through the food itself. As befits a restaurant whose name translates as ‘The Gardener’, this bright, airy space—with its floor to ceiling windows, olive-colored furnishings, and green-veined marble flooring—resembles a large, elegant greenhouse or an immaculate indoor garden. The minimalist aesthetic is embellished by abundant greenery, creating a mood of peaceful escape from the bustling metropolis outside.
Le Jardinier’s Culinary Director, Alain Verzeroli, was born in Vietnam and raised in Paris, where he dropped out of business school to pursue a passion for cooking sparked by his first ever experience in a Michelin-starred restaurant. Since then, Michelin stars have continued to play a significant role in Verzeroli’s career. After graduating from the École Supérieure de Cuisine Française (ESCF), he worked at the three-Michelin-star Arpège restaurant among other top Parisian eateries, before meeting Joël Robuchon, who became his principal mentor for the following two decades. He spent three years at Joël Robuchon’s NYC restaurant, then another three at Michelin-starred Petrus in Hong Kong, before dedicating the following 18 years of his life to Le Chateau de Joël Robuchon in Tokyo. Under his culinary direction, it won and retained three Michelin stars for 11 consecutive years after the guide first began to operate in Japan.
The original Le Jardinier in New York City received its first Michelin star in 2019 and has retained it since. Le Jardinier in Miami has been awarded one star in the Florida Michelin Guide every year since 2022, which is when Michelin began sending its inspectors to the city.
