Patatas Bravas
Patatas bravas are crunchy potatoes baked in the oven, covered with a spicy sauce: this tasty Spanish food is even completely vegan

ingredients
Potatoes
600 g, peeled and diced
Tomatoes
6 each
Onion
1, diced
Garlic
1 clove, finely chopped
Tomato puree
15 ml
Sugar
To taste
Tabasco
To taste
Brown sugar
To taste
Oregano
15 ml, chopped
Olive oil
30 ml + some for drizzling
Salt
To taste
Preparation
- Heat the oven to 180°C (160° fan) 350°F gas 4.
- Grease a baking tray.
- Put the potatoes on the baking tray.
- Sprinkle with olive oil and sea salt and cook for about 20 minutes until golden brown, turning several times.
- Drop the tomatoes into boiling water for a few seconds, then skin, quarter, deseed and dice.
- Heat 30 ml oil in a frying pan and gently cook the onion and garlic until translucent.
- Stir in the tomato purée and tomatoes.
- Simmer for 6-8 minutes.
- Add sugar, salt and Tabasco to taste.
- Put the potatoes into bowls, spoon the tomato sauce over and serve sprinkled with oregano.
