'Sarde a beccafico' is a typical second course in Sicilian cuisine: butterflied sardines, stuffed with a mix of breadcrumbs, pine nuts, raisins and herbs, with a hint of orange. Here's an easy recipe to prepare this tasty Sicilian classic.

Step 01

Wash and split the sardines in two, leaving the fillets attached by the tail.

Step 02

Toast the breadcrumbs in a pan, then remove from the heat and add plenty of chopped parsley, pine nuts, raisins, salt, ground black pepper and the juice of one orange.

 

Step 03

Arrange a little of the mixture on each of the sardine fillets, roll them up and arrange them in an oven-proof pan.

Bake at 180 °C for 15 minutes.

Serve.
