Vegan Red Lentil Soup

ingredients
Oil
4 tbsp
Onion
1, finely sliced
Garlic
4 cloves
Ginger
thumb size piece, peeled and chopped
Red chilli peppers
1, deseeded and finely chopped
Curry powder
2 tsp
Turmeric
1 tsp
Red lentils
300 g
Tomatoes
200 g, chopped
Vegetable stock
750 ml
Scallion
2, sliced diagonally
Cilantro
2 tbsp, chopped
Preparation
Heat the oil in a deep pan and fry the onions until soft but nor brown.
Add the garlic, ginger, chile pepper, curry powder and turmeric and cook for 2 minutes then add the lentils and stir well.
Add the tomatoes and chicken broth, season with salt and pepper and simmer very gently for about 20 minutes or until the lentils are tender.
