ingredients

Potatoes
675 g, medium, red, cut into wedges
Dill
1/2 tsp
Garlic
1/2 tsp
Salt
1/4 tsp
Paprika
Kosher salt
to taste
Pepper
black, freshly ground,to taste
Olive oil
1 tsp
Shrimps
450 g, heads removed
Lemons
1, cut into wedges
Old bay
to taste
Butter
110 g
Garlic
9 cloves, peeled
Sausages
3, andouille, halved lengthwise

Preparation

Step 01

For Potatoes

  • Put potatoes in a bowl and cover with cool water.
  • Let sit for at least 30 minutes.
  • Drain and rinse well.
  • Pat dry with paper towels.
  • Preheat oven to 425 degrees.
  • Combine the dill, garlic, paprika, salt and pepper in a small bowl. Toss the potatoes with the olive oil and then the seasoning mix.
  • Line a baking sheet with parchment paper and spread the potatoes in one layer on top.
  • Bake 30 minutes or until edges are a golden brown, tossing one to two times during cooking.

Step 02

For Shrimp

  • Rinse and drain the shrimp. Bring a big pot of water to boil. Cut the lemon into quarters and set aside.
  • In a smaller pot, melt the butter.
  • Once the butter has melted, add in the garlic and cook until fragrant. Add in the old bay seasoning and let simmer.
  • Once the water is boiling, add in some old bay seasoning and lemon wedges.
  • Cook the shrimp for 2 minutes, drain and transfer to a bowl.
  • Pour the butter sauce over the shrimp and toss well.

Step 03

For the sausage

  • Place links on a preheated grill until marks appear, about 3 minutes on each side.

Step 04

To Serve

  • Transfer sausage, potatoes and shrimp to a serving platter and serve with fresh lemons and aioli dipping sauce.
