Hu Tieu (Vietnamese Noodle Soup)

Sesame oil
1 tbsp
Chili pepper
1 red, sliced in rings
Ginger
2 - 3 cm, peeled, chopped
Garlic
1 clove, peeled, chopped
Dashi
1000 ml
Chicken
2 breasts, approx. 140 g each
Rice noodles
200 g
Broccoli
300 g, cut into florets
Thai Basil
1 handful
Coriander
leaves
Soy sauce
3 - 4 tbsp
Brown sugar
1 pinch
Lime juice
1 - 2 tbsp
Preparation
Hu Thieu recipe, Vietnamese Noodle Soup
To prepare Hu Thieu recipe start heating the oil in a pan and briefly fry the chilli, ginger and garlic.
Pour in the dashi and bring to the boil.
Add the chicken and noodles and cook over a low heat for approx. 10 minutes, adding the broccoli after about 5 minutes.
Remove the chicken from the soup and slice or tear into pieces.
Return the pieces to the soup.
Mix in the herbs.
Season the soup with soy sauce, sugar and lime juice.
Garnish the Hu Thieu recipe with fried onion to serve.
