Seaweed salt: 1 tsp

Scallion: 1 bunch (chopped)

Rice oil: 1.5 cups

Crispy shallots: 1/4 cup

Shiso leaves: 2 (thinly sliced)

Chives: 1 bunch (chopped)

Created by Chef Hiromi Iwakiri at Moody Tongue Sushi in the West Village, Chef-owner-brewmaster Jared Rouben pairs it with their Sour Watermelon Saison, but at-home chefs should feel free to experiment with their favorite saison-style brew.

How to make Moody Tongue Sushi's Fluke Crudo

Slice the Fluke and arrange on a plate.
