Grapes
150g mixed, sultans, currants, raisins
Candied lemon zest
50 g, chopped
Brandy
3 tbsp
Bread
225 g, gluten free, brown, crusts removed
Milk
275 ml
Butter
50 g, melted
Sugar
75 g, dark brown
Spices
2 tsp, mixed
Nutmeg
1/4 tsp, grated
Eggs
1, large, beaten
Oranges
1, small, unwaxed, finely grated zest
Whipped cream

Preparation

To prepare the gluten free bread pudding, start putting the dried fruit and candied peel in a bowl. Pour over the brandy and set aside.

Break up the bread and soak in the milk until soft, then beat with a fork until creamy.

Heat the oven to 180°C (160° fan) gas 4. Grease 4-6 individual pudding basins.

Mix together the melted butter, sugar, spices and egg, then beat into the soaked bread.

Stir in the soaked fruits, with any brandy remaining and the orange zest.

Spoon into the basins and bake for 35-45 minutes until cooked through.

Turn out onto serving plates and serve the gluten free bread pudding with whipped cream.
