Preparation
Clean the chicken breast, cut into cubes and place onto skewers.
Then cover with egg and bread crumbs, and fry the chicken in the clarified butter.
Separately, prepare the sauce by lightly melting the butter, adding the lemon juice and stirring over low heat.
Adjust salt and serve on a small dish with chives.
