120 g all-purpose + 120 g whole wheat
Bicarbonate of soda
2,2 g
Baking powder
3,8 g
Salt
5 g
Sugar
75 g
Eggs
3, beaten
Butter
57 g, unsalted, melted
Buttermilk
475 ml, room temperature
Oil
As needed for the waffle iron

Preparation

  • Preheat waffle iron according to manufacturer's directions.
  • In a bowl, use a whisk to blend together the flours, soda, baking powder, salt, and sugar.
  • In another bowl beat together eggs and melted butter, and then add the buttermilk.
  • Add the wet ingredients to the dry and stir until smooth.
  • Allow to rest for 5 minutes.
  • With a ladle, pour the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations.
  • Close iron top and cook until the waffle is golden on either side, and is easily removed from iron.
  • Serve immediately or keep warm in an oven until ready to serve, with the toppings of your choice.

Suggested toppings: butter, maple syrup, jam, sour cream.
