Watermelon and feta salad is a delightful, yet surprising, salad combination that’s grown in popularity over the last few years. The salty feta makes for an unusual, but perfect, pairing with the sweetness of the watermelon, and their contrasting textures adds an extra layer of intrigue and appeal. Watermelon
180g / 6.3 oz
Cucumber
½
Mint leaves
½ bunch
Feta cheese
100g / 3.5 oz
Balsamic vinegar
1 tbsp / 0.5 oz
Extra virgin olive oil
1 tbsp / 0.5 oz
Fine salt
To taste
Black pepper
To taste

Step 01

Tip the chopped watermelon and cucumber into a large mixing bowl. Then add the torn mint leaves.

Step 02

Drizzle with 1 tbsp olive oil and mix gently together. Season with salt and black pepper, then transfer into a salad serving bowl.

Step 03

Crumble the chopped feta over the watermelon and then drizzle with 1 tbsp balsamic glaze before serving. Try serving alongside salmon fillets.

 

Tips & tricks

For our best watermelon feta mint salad, we always lead ingredient-first. This is the easiest and quickest way to ensure your salad is the tastiest dish it can be. We recommend making this salad when watermelon is in season for quality ingredients. Usually this falls between May to September. There are also lots of trips and tricks for picking the ripest watermelon, including checking the stem to make sure it’s a yellow-brown colour. Recipe variations

In the watermelon salad recipe we’ve shared above, we’ve kept to a basic method with minimal dressing. But there are lots of delicious ways you can vary this recipe. Firstly, some chefs like to include red onion, to add an additional flavour dynamic and crispy texture to the dish. If you prefer your watermelon feta mint salad with a spicy kick, it’s also possible to introduce peppers and chillies to the dish, to balance out the sweet and salty taste of the watermelon and feta cheese. Another twist we love is with radish (daikon) and we have an alternative recipe using these flavour combinations here. For those that like a citrus profile, many versions of the recipe also call for the addition of lime juice. You can whisk this together with the olive oil prior to adding as a dressing to the watermelon and mint. Lastly, avocado is a common addition to the dish. You can add ½ chopped avocado to the recipe above and add at the same time as the feta cheese, for a salad full of colour pops.

Storage

You can store watermelon and feta salad in the fridge in an airtight container for around three days. After this time, it’ll be past its best, so we recommend consuming it on the day of making.
