Sweet Potato Crisps with Avocado and Garlic Mayonnaise
A delicious appetizer with sweet potato crisps and fresh avocado dipped in fresh mayonnaise

ingredients
Avocado
1 each
Lemon juice
2 tbsp
Mayonnaise
200 g
Garlic
2, cloves, crushed
Parsley
2 tbsp, chopped
Potatoes
250 g, sweet, peeled, sliced
Oil
vegetable
Preparation
Mix the avocado with the lemon juice.
Mix together the mayonnaise, avocado, garlic and parsley. Season with salt and pepper and chill until required.
Heat sufficient oil in a pan to 160°C and fry the potatoes slices until golden brown and crispy.
Remove using a slotted spoon and pat dry with kitchen paper. Serve with the dip.
