Feta saganaki

ingredients

Feta cheese
8oz (227g)
Eggs
1
Tomatoes
2 large ripe, sliced
Oregano
1 tsp (5ml) fresh, finely chopped
All purpose flour
½ cup (60ml)
Olive oil
2 tbsp (30ml)
Lemon
1, cut into wedges
Freshly ground black pepper
to taste

Method

 

 

Step 01

Cut feta into eight slices of equal size (2 x 3/8 inches). In a small bowl, whisk the egg with the finely chopped oregano. Dip feta in egg mixture, shake off excess and coat in flour.

 

Step 02

In a frying pan, heat olive oil over medium heat. Put feta slices in the pan and cook until golden, then flip and cook on the other side. Pat dry with paper towels.

 

Step 03

Place fried feta cheese on a dish alongside tomato slices. Add black pepper for seasoning and decorate with wedges of lemon.
