Creamed Pea and Leek Soup with Croutons

Butter
50 g
Thyme
1 tsp, chopped leaves
Garlic
1 clove
Vegetable stock

Peas
280 g, frozen
Lettuce
1
Mint
1 tbsp, chopped leaves
Cream
300 ml, 30% fat
Salt
Pepper
freshly milled
Croutons
to serve
Preparation
Wash and trim the leeks and cut into rings.
Peel and chop the garlic.
Wash and shred the lettuce. Heat the butter in a pan and saute the leeks, thyme and garlic.
Add the broth and bring to a boil.
Add the peas and lettuce and cook for 5 – 6 minutes, until the peas are soft.
Remove from the heat and puree finely.
Add the mint and cream and return to a boil.
Season with salt and pepper and serve scattered with croutons.
