Onion
1, small, finely chopped
Chicken
400 g, breast, skinless boneless, finely chopped
Breadcrumbs
50 g, fresh
Eggs
1, beaten
Sweet corn
200 g canned, drained
Salt
to taste
Pepper
to taste
Oil for frying

Preparation
Mix together all the ingredients, except the oil, in a mixing bowl.
Form into 15-18 round patties.
Place the patties on a plate, cover with cling film and chill for 30 minutes.
Heat the oil in a frying pan, about 1.5 cm deep and cook the patties, a few at a time for 3-4 minutes on each side.
Serve with a chilli dipping sauce and green salad.
