Method
Preheat the oven to gas mark 6, 400°F/180°C fan (or 200°C conventional). Drizzle the bread with half the olive oil, rubbing gently into both sides, and then place onto a baking sheet and bake for 10 minutes.
Once the bread is toasted, remove from the oven and rub the garlic clove into the bread.
Using the same tray for the toast, place the cherry tomatoes onto the tray and drizzle the tomatoes with the remainder of the olive oil. Season with the black pepper and salt and then give the tomatoes a big mix up. Roast in the oven for around 10 minutes, until the tomatoes are bursting.
Whilst the tomatoes are cooking, spread a healthy helping of the burrata onto each piece of toast. When the tomatoes are ready, remove from the oven and then scatter across the burrata as desired.
Garnish with fresh basil leaves, and season with salt and black pepper. The burrata toast is then ready to serve.
