Bananas: 4
Whole milk: 400ml
Eggs: 2
Caramel
Here's how to make banana pudding with the recipe from Fine Dining Lovers.
Peel the bananas and cut them into small pieces. Blend them until creamy.
Put the banana puree in a large bowl. Add the eggs and mix with a whisk until frothy.
Slowly add the milk while continuing to mix. If your mixture has lumps, you can filter it with a narrow mesh strainer.
Pour the caramel into the mould and then add the mixture of milk, eggs and bananas.
Place the mould in a larger pan and prepare the bain-marie by adding 3/4 of the capacity of cold water.
Bake the banana pudding at 180° C for 30 minutes, then take it out of the oven and let it cool.
Add more caramel to taste, portion it and serve. For a more crunchy version you can add coarsely crumbled dry biscuits.
How to make vegan banana pudding
For a vegan version of this delicious dessert, you can replace the milk with the equivalent quantity of a soy or rice drink. Or, you could also try using oat milk, which won't alter the dessert's taste. To replace the eggs, you can add 4 teaspoons of potato starch to the banana mix.
