Ingredients
Bacon: 4 rashers
Olive oil: 0.5 oz/1 tbsp
Large onions: 1, chopped
Eggs: 2
Butter: 1 oz/2 tbsp
Cheddar: 4 slices
Avocado: 1
Bagels: 2, sliced
Fine salt: To taste

If you fancy a savory and hearty start to the day, look no further than the mighty bagel breakfast sandwich. Method
Cook the bacon as preferred, and then drain on paper towels. Heat a frying pan over a medium heat with a drizzle of olive oil and, once hot, add the chopped onion. Cook for around 6 minutes until softened. Set aside with the bacon.
Crack the eggs into the frying pan, and cook for around 4 minutes, until they’ve reached your desired consistency. Whilst the eggs are in the pan, toast the bagels until golden and then butter.
Halve your avocado, remove the stone and scoop the flesh out. Slice the avocado into four even slices from each half.
Build your bagel. Add the cheese slices, then the eggs, onion, bacon, and top with the sliced avocado. Season with salt and pepper.
Tips & tricks

Recipe variations
If you’re not such a fan of bacon, you could add smoked salmon, or remove the meat entirely if you’d like a plant-based dish to start the day with. Cheddar cheese is optional, or you could mix up your cheese. Cream cheese and bagels are a match made in food heaven, and a bacon egg and cheese bagel with cream cheese is a delicious and indulgent breakfast item. We’ve included avocado in our example above, but you could switch this out for tomato. Storage
Breakfast bagel sandwiches are much better fresh, and you can make as many or as few as you need to suit how many people you’re cooking for, so leftovers should be fairly minimal. If, however, you find your appetite isn’t up to the job that day, you can put the leftovers into an airtight container in the refrigerator, and they’ll keep until the next morning. If you have used avocado in your sandwich, this will brown the quickest and is likely to only last for a day after making.
