Jordi Roca, the Willy Wonka of Spanish gastronomy, with three Michelin stars to his name has an ice-cream shop Rocambolesc, in Girona, Spain.
Roca, the pastry chef, who makes up the sweet part of the Roca partnership says he is addicted to ice-cream and that since he was a boy, he wanted to own an ice-cream parlour.
In fact, it was his cigar smoke-infused ice-cream that first opened his eyes to the creative possibilities in the world of deserts and led him to excel in his position as a pastry chef. His achievements helped elevate El Celler de Can Roca to become one of the world’s greatest restaurants.
