A brief history of Buffalo chicken wings

The invention of Buffalo chicken wings occurred in 1964 in Buffalo, New York, at the family-owned Anchor Inn. The bar had mistakenly received a shipment of wings and didn’t know how to use them. One night, the creative and resourceful bar's owner, Teressa Bellissimo, cut a batch of chicken wings in half to make tiny drumsticks. She kept them unbreaded and deep-fried them, then covered them in her hot sauce and arranged them with stalks of celery and blue cheese dressing because that's what she had available.

Before 1964, wings were considered scraps – the most worthless part of the chicken. They were either discarded or sold to low-income families. The night Teressa came up with the recipe, she served this dish to her son and a group of his friends. They loved the snack so much that Teressa and her husband Frank added the chicken wings to the menu at the Anchor Inn. Within a week, Buffalo had a new favourite food. The couple reported that people flocked to the bar for an order of Buffalo chicken wings. Other Buffalo restaurants soon began serving their version of wings to customers. By the mid-1980s Buffalo wings had spread across the country, and Buffalo has celebrated Chicken Wing Day every 29 July since 1977. 

Most commonly, Buffalo wings are served with small sticks of celery and blue cheese dipping sauce. However, the most popular wing dipping sauce in the United States is ranch dressing. Buffalo wings are often called simply 'wings', 'hot wings', or 'chicken wings'.
