The results of our Why Waste? survey are finally here, and are now ready for you to download. Back in July, Fine Dining Lovers joined forces with S.Pellegrino and Food For Soul to launch the Why Waste? series. Since then, we've been canvassing our readers on their cooking behaviours and attitudes to food waste, in an attempt to understand how we can address one of the most pressing issues facing gastronomy and the environment.
Over 5,000 people took part, from home cooks to culinary professionals, and the results are most revealing. They suggest the older we get, the more concerned we become about food waste, and that perishables like fruit and vegetables are most likely to be wasted, especially in the form of leftovers. It all points to us getting a little more creative in the kitchen - and for inspiration we can turn to our Why Waste? series of videos with Massimo Bottura, whose Food For Soul initiative, founded with Lara Gilmore, is tackling food waste and promoting a sustainable culture for all.
