The city of Lima is getting unprecedented international attention for its bustling culinary scene. So what have you been missing out on? Well, Peruvian chef Gaston Acurio already filled us in on 26 must-try foods and now the latest edition of The Feed Podcast offers more clues about food in Lima.
Podcast hosts Chicago chef Rick Bayless and food reporter Steve Dolinsky distill the culinary gems of the Peruvian capital and highlight some of the country's top chefs including the aforementioned Acurio, Virgilio Martinez and Mitsuharu Tsumura, all of whom have restaurants on the Latin America's 50 Best Restaurants list sponsored by S.Pellegrino and Acqua Panna.
"Lima is having it's moment in the U.S. press but it's been a really amazing hot place for a long time," Bayless explains. "It takes a generation or two to develop the kind of chef culture that you find in Lima these days. They've always had amazing product but now they have this contemporary approach to making traditional food and putting it out in world class style."
