The team from MAD have started to release videos from this year’s event and this time one of the first videos comes courtesy of organiser René Redzepi’s closing speech.
Redzepi discusses the idea of Tomorrow’s Kitchen, which was the theme chosen as the anchor point for the festival and muses on what he wants to see from the kitchens of the future.
To follow this look into the future MAD have also released the video of Jacques Pépin’s speech. Pépin, who has many years of valuable experience, looks back to the kitchens of the '50s and tells some stories that show just how much they have changed.
During his speech the chef effortlessly prepares chicken galatine and even finds the time to show the audience how to make what he calls a perfect omelette.
