When Jay Fai received a Michelin star for her Raan Jay Fai restaurant, the street food staller owner from Bangkok was shot into the media spotlight. Her fiery noodle place, famous for crab curry and particularly for her crab omelette, was the first street food stall in Thailand to receive a Michelin star.
During a presentation at MAD 6, the food symposium organized by Rene Redzepi in Copenhagen, Jay Fai spoke about her recent standing in the spotlight as she prepared her famous omelette for the crowd.
This is exactly how it’s made, a simple dish that’s been elevated to world famous status. Watch as she pours lots of hot oil into the pan, much more than expected as she sets about making her dish. One of her little tricks is to add a bit of flour to the egg to give it a nice crispy finish.
