From Buenos Aires, Argentina to Menton, on the border between Italy and France – a place that gave chef Mauro Colagreco “goosebumps” the first time he arrived: this Michelin-starred chef (the first Argentinian to receive the honour) speaks to FDL with an open heart about his passion for cooking, his country of origin, and the joy the smell of fresh coriander brings him.
His inspiration can come from a simple carrot from the garden, to the discoveries of the Americas, and his desire to “ricreate the landscapes” of each individual ingredient is what drives him in his absolutely free and unique manner of creating his signature dishes.
