Situated directly above Ratino’s other DC restaurant, Bresca, Jont has an atmosphere that has been described as “almost sacred.” The décor may be minimal, but the dining experience is full-on: bold, beautiful, and like nothing else in Washington DC, or most other cities for that matter. Each of the 16 seats placed around the counter faces the kitchen, an implicit invitation to diners to focus on the food. The experimental 15-course tasting menu takes them on a gastronomic journey with some of the world’s rarest and most prestigious ingredients. Meanwhile, the mood—aided by a high-energy playlist and the constant movement of the dynamic young team of chefs and front-of-house staff working in smooth, efficient harmony—is endlessly thrilling.
Jont’s chef and owner Ryan Ratino was born in Medina, Ohio, and began cooking at an early age to help his busy mother, replicating the recipes he saw celebrity chef Emeril Lagasse prepare on his TV show. After studying at culinary school Le Cordon Bleu in Orlando, he remained in Florida to begin his career, working in award-winning restaurants such as Shula’s Steak House at the Walt Disney World Swan and Dolphin resort and Todd English’s Bluezoo. He also spent several years in New York City, working at Michelin-starred Caviar Russe, Dovetail NYC, and Wylie Dufresne’s innovative restaurant wd~50. Here he was introduced to molecular gastronomy, which he says “adds creativity and dimension” to his cooking. His big break came with his appointment as Executive Chef of Washington DC restaurant Ripple, where he earned a Rammy Culinary Rising Star of the Year Award in 2017. When Ripple closed that year, he took the opportunity to open his own place, Bresca. Its success (garnering a Michelin star the year after opening) allowed him to open Jont, located in the same building, in 2020.
Since then, his empire has rapidly expanded—through his company Hive Hospitality— to include two new restaurants in Florida, with more to follow soon in California.
In 2022, Jont was included in The World’s 50 Best Restaurants Discovery list, while in 2023, Ratino was awarded the Michelin Young Chef Award for Washington DC.
