Potato Croquettes
Potatoes: 1 kg
As needed
Butter: 30 g
White pepper: To taste
Nutmeg: To taste
Parmesan cheese: 30 g (or Grana Padano), grated
Eggs: 2
All purpose flour: As needed
Breadcrumbs: As needed
Parsley: To taste
Salt: To taste
An easy recipe to make potato croquettes, a vegetarian snack that fits for a king: find out how to prepare these crunchy potato croquettes, made from scratch.
To make potato croquettes with this easy recipe start peeling the potatoes, then cut them into four pieces, put them into cold, salted water and then bring to boil. If you prefer, you can peel them after boiling as shown in the video below.
Once cooked, drain and smash them in a pan with some butter, over a low flame.
When the purée seems compact and smooth, remove from heat and season with salt, white pepper, nutmeg, the grated cheese and then an egg yolk.
Mix everything well.
When the mixture cools, create the croquettes, pass them through the flour, a beaten egg and then the bread crumbs.
Fry the croquettes in boiling oil, making sure they’re evenly golden.
Pat off the grease and serve the potato croquettes warm with fresh parsley.
