Hasselback potatoes are typical of Swedish cuisine and take their name from the first restaurant to make this kind of accordion-cut potatoes. Very common and often underrated, potatoes become a beautiful and delicious side dish with this preparation. Hasselback potatoes are prepared in the oven, and the traditional recipe involves keeping the skin on, which becomes crunchy, and adding butter. But you can also flavour the Hasselback potatoes with chopped herbs and spices. Great when served with a sauce, Hasselback potatoes are also perfect for serving at Sunday brunch. The secret is all in the cutting. Here's how to make Hasselback potatoes, quickly and easily.

To make Hasselback potatoes, start by washing the potatoes very well under cold running water.

Dry the potatoes completely with kitchen paper.

To help you cut, skewer the potatoes at the base with a skewer or toothpick. By doing this you will be able to stop the incisions at the right point without going all the way, thus dividing the potato.

With a sharp knife, make the incisions. The slices must be very thin.

At this point, remove the skewer and rinse the potatoes again to remove as much starch as possible. Then drain them in a colander with the cuts facing down.

History and origins

The Hasselbacken restaurant in Stockholm had the idea to serve baked potatoes with this particular cut. It is from this restaurant that this recipe takes its name, which became known and appreciated all over the world. In Sweden, they are served with sour cream and salmon, but the variations of the original recipe are now countless.

Variants

You can replicate the Hasselback potato recipe using sweet potatoes. In their vegan version, Hasselback potatoes are prepared with only extra virgin olive oil, without the addition of butter. You can also prepare them in a sweet version by adding vanilla and sugar. An even more appetising version involves the addition of grated cheese with aromatic herbs. Also, you can try them with small slices of bacon between one cut and the next.

Storage

You can prepare the Hasselback potatoes in advance and then reheat them under the grill just before serving. Once prepared, you can keep them covered at room temperature for a day.

Which potatoes to use

You can use any type of potato to make Hasselback potatoes, even old ones. It is important, however, that the baked potatoes are all more or less the same size in order to have the same cooking time.
