Grilled Sardines
Time for some fish, try this recipe for grilled sardines with tomatoes

ingredients
Sardines
12 each, gutted, washed
Olive oil
2 tbsp
Thyme
12 sprigs
Lemons
2 each
Tomatoes
6 large
Salt
Pepper
Preparation
- Heat the grill to a medium high setting.
- Slash the sardines diagonally, rub a little oil over the fish and place on a grill pan lined with tin foil.
- Squeeze a little juice from each of the lemon wedges into the uppermost slashes on the fish and sprinkle the fish with a little salt.
- Put a sprig of thyme into the fish cavities and grill for about 3 minutes.
- Turn the fish over and push the tomatoes into the uppermost slashes. Put the lemon wedges into the cavities and return to the grill for about 3 minutes or until the fish is cooked through.
- Serve the fish with all the juices caught in the grill pan and sprinkle with salt and pepper.
