Try this as a topping to sandwiches, served next to braised beef or pulled pork. You won’t believe how easy coleslaw is to make at home – just a few ingredients, most of which you probably already have in your kitchen.

Grate carrots on the larger side of a box grater.
Step 03
Put the vegetables in a colander and sprinkle lightly with salt. Leave to stand for one hour.
Step 04
Drain off the juice, pressing the vegetables to extract as much juice as possible. Discard the juice.

Put the vegetables in a large bowl.

For the dressing, whisk together mayonnaise, apple cider vinegar, dijon mustard, sugar and celery seed. Season with salt and pepper to taste.

Pour the dressing over the vegetables and mix gently.

Cover with plastic wrap and refrigerate until ready to serve. The best way to serve coleslaw is to chill it for at least a couple of hours.
