Lemon curd

Give a special touch to your desserts with this easy lemon curd recipe, made with lemon juice and zest, and Cointreau liqueur.

Butter
100g/3.5 oz
Sugar
350g/12.3 oz
Lemon zest
2 tsp/0.3 oz, organic
Lemon juice
7 lemons, sieved
Eggs
4, very fresh
Cointreau
40ml/1.3 oz

Method

Step 01

Melt the butter in a bain marie along with the sugar, lemon zest and lemon juice.

Step 02

Beat the eggs and add them gradually to the mixture until it takes on a creamy consistency.

Step 03

Stir in the Cointreau.

Step 04

Pour the mixture into sterilised jars, close tightly and store in a cool, dark place.

How to use lemon curd

Simply put, lemon curd is incredibly versatile. It can be used in a host of different ways to add tang to treats such as vanilla ice cream and yoghurt. It is also delicious spread on scones or hot buttered toast. Hide a spoonful of lemon curd in the middle of a cupcake, spread it under whipped cream between the layers of a sponge or stir a dollop into porridge. The only limit is your imagination.

How to store lemon curd

Once opened, lemon curd will keep in the fridge for up to a week in an airtight jar or up to three months in the freezer. If you do freeze it, make sure you defrost it overnight before using it.
