Bread
100 g, stale, cubed
Eggs
2 each
Salt
Pepper
Nutmeg

Ricotta cheese

Red bell peppers
1/2, pepper, diced, finely
Corn kernels
1 can, drained
Zucchini
1, diced
Chives
3 tbsp
Breadcrumbs
4 tbsp
Oil
French bread

Lettuce
8 leaves
Tomatoes
2 sliced
Ketchup

Preparation

Put the bread cubes into a bowl. Whisk the eggs with salt, pepper, nutmeg and paprika and pour over the bread. Leave to stand for 10-15 minutes.

 Add the cottage cheese, vegetables and chives to the bread mixture and mix well. If the mixture is too soft to shape, gradually add the breadcrumbs. Mix well and leave to stand for 5 minutes.

Shape the mixture into 8 small burgers.

Heat the oil in a frying pan, to a depth of about 2.5cm|1". Cook the burgers for a few minutes on each side until golden brown. Drain on absorbent kitchen paper.

Slice the baguette into 4 pieces. Place 2 burgers in each piece and add the lettuce and tomatoes. Serve with a small bowl of tomato ketchup.

Tips: Variation: replace the cheese with finely chopped firm tofu.
