Sweetcorn Cupcakes

All purpose flour
1 cup
Salt
1 pinch
Sugar
50 g
Baking powder
1 1/2 tsp
Margarine
50 g
Cornmeal
1 cup
Eggs
1
Milk
1 cup
Sweet corn
100-150 g, kernels, canned
Bacon
80 g, smoked, finely diced
Preparation
Put the flour, salt, sugar and baking powder into a food mixer, add the margarine and mix until the ingredients resemble fine breadcrumbs.
Add the egg and milk and mix until the dry ingredients are moist.
Stir in the sweet corn kernels and bacon.
Put the paper cases together in twos and divide the mixture between them.
Bake in a preheated oven (200°C) for 20-25 minutes.
Serve hot or cold.
