Pear and Gorgonzola toasted sandwich

Ingredients

Bread: 8 slice white sandwich

Apples: 4 tbsp, chutney (good quality)

Gorgonzola cheese: 170 g, cubed

Pears: 2, peeled, cored and sliced finely lengthways

Rocket: 25 g

Hazelnuts: 1 tbsp

Extra virgin olive oil: 1 tbsp

Raisins: 1 tbsp, golden

Creamy, rich, and delicious. This is the perfect sandwich to enjoy as a snack at any time of the day. It's also a great sandwich for picnics.

Preparation

How to make a delicious pear and Gorgonzola toasted sandwich

Pre-heat the grill to hot.

Toast the slices of bread for 2-3 minutes on both sides until deep golden in colour all over.

Remove and spread half of the slices evenly with apple chutney.

Top with the cubed Gorgonzola and slices of pear, then return to the grill to melt the cheese.

Remove once the cheese has just melted and arrange on serving plates.

Quickly re-heat the other pieces of toast and sit on top of the pear to complete the sandwiches.

Place small handfuls of rocket and a few hazelnuts and sultanas alongside the sandwich as a simple salad.

Dress with the olive oil.

Serve immediately.
