Vegetable oil

Cornflour

200 g, grated
Scallion
4, finely sliced
Tomatoes
4 large, chopped
Avocado
2, peeled, stones removed and flesh chopped
Lettuce
1/2, shredded
Parsley
2 tbsp, chopped
Limes
wedges
Parsley

Preparation

Heat about 1 teaspoon of the oil in a large frying pan.

Lay one of the flour tortillas in the pan and cook for about 2 minutes, turning from time to time.

Remove the tortilla from the pan and keep warm.

Repeat with three more toritillas.

Cook the fifth tortilla as above then turn the heat down a little and scatter over a quarter of the cheese.

Scatter over a quarter of each of the other ingredients, season with salt and pepper then carefully remove the tortilla from the pan.

Lay one of the cooked tortillas on top to make a sandwich and cut into quarters.

Repeat with the remaining tortillas and filling ingredients and serve garnished with the lime wedges and parsley.
