Preparation
- Peel and cut the burdock and put it in a pot with 2 litres of salted water, let it boil for 25 minutes over low flame.
- Drain and then mash the roots, then salt and add pepper.
- Sauté the onion in butter then add the burdock, the bread crumbs, the beaten egg and the parsley.
- Mix until smooth then create the croquettes (around 5 cm in diameter), sprinkle them with corn flakes and fry.
