Roast Beef Salad

Here is an easy and quick way to prepare a delicious roast beef salad, topped with fresh coriander and aromatic orange zest.

Beef
600 g, well hung sirloin
Clarified butter
1 tbsp
Salt
Pepper
freshly ground
Salad
200 g, mixed, leaves
Coriander
1 bunch, leaves only
Tomatoes
4 small, quartered
Onion
1 red, cut into wedges
White wine vinegar
2 tbsp
Raspberry vinegar
1 tsp
Olive oil
4 tbsp
Sugar
1 tsp
Mustard
1/2 tsp
Salt
Chili pepper
1/4 tsp
Oranges
zest

Preparation

How to make a tasty roast beef salad

  • Heat the oven to 160°C (140° fan) gas 3.
  • Trim the beef.
  • Heat the clarified butter in an ovenproof frying pan and brown the beef meat on both sides over a very high heat.
  • Season with salt and pepper, place on a baking tray and roast in the oven for 20-30 minutes, until cooked to your liking.
  • Remove from the oven and allow to rest for 5 minutes before carving.
  • Put the salad leaves, two-thirds of the coriander, tomatoes and onion into a salad bowl.

For the dressing

  • Mix together all the ingredients, check the seasoning, add to the prepared salad ingredients and toss.
  • Slice the roast beef thinly.
  • Divide the salad between 4 plates and arrange the beef on top.
  • Serve garnished with the remaining coriander and orange zest.
