Baking powder
1 tsp
Eggs
1 large
Milk
150 ml, whole
Buttermilk
150 ml
Butter
2 tbsp
Blueberries
150 g
Maple syrup
100 ml

Preparation

How to make fluffy buttermilk pancakes

To prepare fluffy buttermilk pancakes first mix the flour with the baking powder in a bowl and make a well in the centre.

Break in the egg and pour in the milk and buttermilk.

Use a whisk to gradually incorporate all of the flour from round the outside.

Melt the butter in a small frying pan then whisk it into the batter.

Put the buttered frying pan back over a low heat.

You will need 1 tbsp of batter for each pancake and you should be able to cook 3 pancakes at a time in the frying pan.

Spoon the batter into the pan and spread out a little with the back of the spoon.

Cook the pancakes for 2 minutes or until small bubbles start to appear on the surface.

Turn the pancakes over with a spatula and cook the other side until golden brown and cooked through.

Repeat until all the batter has been used, keeping the finished batches warm in a low oven.

While the pancakes are cooking, heat the blueberries and maple syrup together in a small pan until the blueberries start to soften and the syrup turns pink.

Serve the fluffy buttermilk pancakes stacked with the blueberry syrup drizzled over the top.
