Carrot and Potato Croquettes
An easy recipe for carrot and potato croquettes, garnished with sesame and poppy seeds: a tasty vegetarian idea perfect for a brunch or as an appetizer.

Potatoes
200 g, waxy, peeled and diced
Carrots
1 - 2, peeled and grated
Eggs
1
Sesame seeds
2 tbsp
Breadcrumbs
60 g
White pepper
pinch
Cardamom
pinch
Cinnamon
pinch
Oil
for frying
Vanilla extract
1 pod, cut into 20 pieces
Poppy seeds
to garnish
Preparation
How to Make Carrot and Potato Croquettes
To prepare the carrot and potato croquettes start steaming the potatoes for approx. 20 minutes until soft.
Leave to cool slightly and then put them through a potato ricer and leave to cool completely.
Add the grated carrots to the potatoes.
Stir in the egg, 1 tbsp sesame seeds, the bread crumbs, salt, pepper and the spices and knead into a smooth dough.
Shape into 20 balls and fry in hot oil.
Stick a piece of vanilla pod into each carrot and potato croquette and serve sprinkled with the remaining sesame seeds and the poppy seeds.
