Raw beef is not something everyone can stomach. In Italy it is quite a delicacy, especially when prepared by some of the country's best chefs.
Just like the Japanese do with fish, beef can be served sashimi style as you'll see in this delightful beef sashimi with foie gras by Milanese chef Matias Perdomo from Al Pont De Ferr restaurant. A drop or two of Pedro Ximenes and black sesame seeds give this dish (pictured above) an extremely luxurious feel.
Another amazing dish comes to us from Michelin-starred chef Giancarlo Morelli. His dish of chopped Piedmontese beef with sweet and sour red onion, burrata cheese with pink pepper, olive oil and anchovy dressing is an adventure of its own. Beautiful and elegant, it's an excellent recipe for entertaining.
